Burrata Splurge
I only needed to try this once and I was in love. There’s something about burrata - the way it opens up, the cream inside - that doesn’t need much else around it. It almost makes you want to overlook the fat and the cream.
You can dress and embellish it to look and taste like a million bucks. You just build lightly around it and let it do its thing.

Ingredients
1 ball of burrata cheese
Rocket leaves
Freshly diced tomatoes
Extra virgin olive oil
Balsamic vinegar
Sea salt
Fresh black pepper
(Optional: olives, sun-dried tomatoes, basil)
Method
Place the burrata in a shallow serving dish - something that can hold a bit of dressing around it.
Add rocket leaves and chopped tomatoes.
Drizzle generously with olive oil and a little balsamic vinegar.Season with salt and pepper.
If you have olives or basil, add them in. If not, it works perfectly well as it is.
Pro Tip : Don’t overwork this. The burrata is the main character of this dish.
